Easy Healthy Banana Bread

Ingredients:

* 3 eggs
* 300 gram (over)ripe bananas
* pinch of salt
* tbsp of maple syrup
* 150 gram of rolled oats
* 1 tsp baking powder
* 1 bar (70 gram) of 100% dark chocolate (chopped up). I used this one from Cacaosuyo cuzco-100-peru-100-dark

Preparation

Preheat the oven to 180 °C. Line a cake form with a baking sheet.
Mix the eggs, bananas, salt and maple syrup in a food processor. Blend until smooth.
Add in the oats and baking powder, mix again.
Stir in the chopped up pieces of chocolate.

Pour the batter into the tin and bake for about 50 minutes. The riper the bananas are the sweeter and more moist the bread will become.

I think it tastes better the next day when it’s completely cooled down!
